What You Will Need
- 2 raw chicken breast fillets
- 1/2 cup of shredded green leaf lettuce
- 1/4 cup of onions
- 1/3 cup of cilantro leaves, chopped
- 1/3 cup of chopped tomatoes (I've been using grape tomatoes lately and just slicing those in half because I'm super lazy)
- 2 Mission brand flour tortillas
- 1/4 cup of shredded cheese
Directions:
- If chicken breast is frozen, let it thaw for a considerable amount of time. If only refrigerated, take both fillets, place them in large plastic bowl. Drizzle the fillets with olive oil, ground pepper, and some chili powder. It's up to you how you like to season your chicken. For me, when making something like tacos, I like a spicy kick. Make sure the fillets are completely covered, but not too coated with spices.
- Place then in a pan over stove on high heat. Grill both fillets until both sides are completely browned. To check if they're through cooking (believe me, it takes quite awhile) take one fillet and slice through the middle in half. If white, they should be cooked all the way.
- Shred the chicken, toss the other ingredients together in a bowl, mix, then warm up tortillas on a pan.
- Place the pieces of shredded chicken on a tortilla with the lettuce, cilantro, onions, and tomatoes. Sprinkle a bit of cheese on top.
