Friday Night Dinner and Drinks created by yours truly and Kady Rubio!












Chicken Parm, garlic-butter green beans, and garlic bread!

What You Will Need:

  • 1/4 cup of extra virgin olive oil, plus 3 tbsp
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 1/2 cup of basil leaves
  • 1 jar of marinara sauce
  • 1 tsp of dried oregano
  • 4 chicken breast fillets
  • 1/4 cup of milk
  • salt
  • 2 eggs
  • 1 cup of breadcrumbs (you can buy these at any store, pre-crushed)
  • 1  cup of grated Parmesan cheese
  • 8 oz. of mozzarella cheese, sliced. 

Directions


  1. Blend milk and eggs together in plastic container, while heating the marinara sauce on a stove top medium heat. 
  2. Preheat oven to 400 degrees. Working one at a time, place a chicken fillet between 2 layers of aluminum foil. Pound the chicken pieces to flatten them to an even thickness- between 1/4 to 1/2 inch. Salt the chicken well. 
  3. In another bowl, mix together breadcrumbs, 1/2 cup of Parmesan cheese, and a pinch of salt.
  4. Heat 1/4 cup of olive oil in a large saute pan on medium-high heat. The oil should be simmering, not smoking. Dredge the chicken peces 1 at a time first in the egg mixture, then roll in the breadcrumbs. Lay the pieces in the hot saute pan. Turn the heat to medium, then gently fry the cutlets until they are golden brown, about 3-4 minutes per side. 
  5. Spread enough marinara sauce to thickly coat the bottom of 9x13 casserole pan (or a cookie sheet works just as well). Once the cutlets are browned on both sides, arrange them on top of the tomato sauce in the baking dish. Drizzle sauce and the sliced mozzarella cheese on top of the chicken fillets. Sprinkle the tops with basil. Then top the rest with the 1/2 cup of Parmesan cheese.
  6. Bake in the oven for about 10-12 min, or until the mozzarella begins to lightly brown. 
Garlic-Butter Green Beans

What You Will Need:
  • 1 bag of raw green beans
  • 1/2 stick of butter
  • 4 tbsp of olive oil
  • 1/3 cup of minced garlic
Directions:
  1. Wash the green beans thoroughly, then toss in a pot of boiling water that is about 2/3 filled. Dump the beans in as soon as water begins to boil. 
  2. Drain the beans in a collander, place them in a plastic bowl. 
  3. Melt in the 1/2 stick of butter and garlic on top of the beans. Mix and stir thoroughly.
