Michael and I made dinner tonight together for the first time in awhile. We made wild salmon, fried brown rice, a salad, and my garlic-sauteed-baked broccoli. Food coma is definitely on its way. I was so stoked he suggested making salmon tonight because I was definitely craving some vitamins/omega 3 acids in my diet aside from all the damn carbs I eat on a daily basis.
Salmon: lay it down on a piece of buttered foil so the skin won't stick. Fold up the edges, then use 1 tbsp of butter, cut into 1/4 around the salmon. Sprinkle lemon juice and dry white wine, plus some garlic cloves and Italian seasoning. Bake for 20 minutes at 350 degrees or until the salmon flakes when you touch it with a fork.
Fried rice: chop and dice onions and carrots, fry in sesame oil, cook until soft. Add in the cooked brown rice on one side of the pan and fry and stir after 2-3 minutes. Add 1 tbsp of soy sauce to the mix.
