Breakfast burritos!


I made breakfast burritos this morning. Usually I don't eat too much of a breakfast, just maybe a slice of toast or a bagel and a cup of black tea, but we had the day off from classes after morning practice thanks to Veterans Day!

 Today's workout was 7,000 yards plus we did Power rack weights in the water, Iso-Belts, and a bunch of other sprints with minimal rest so I was starving by the time practice was over. And this is pretty much what resulted in the kitchen. I scrambled 4 (yes that's right, FOUR) eggs, diced some onions and tomatoes, sliced mushrooms, scooped half an avocado, sprinkled some cheese on top, then heated my tortilla and wrapped it all up. 

It was absolutely marvelous. Such a great reward to come home to after a hard 2 hour swim workout. I was going to slice some tofurkey and add some potatoes in there but I totally forgot about it. Oops. It's okay, my burrito was way too fat with other stuff anyway.
