I always make quesadillas but I've never made guacamole before so this was a pretty exciting prospect. Making guacamole is extremely easy. I'm an avid fan of avocados and I eat copious amounts of it all the time. I like eating them plain with a pinch of salt...just scooping the gals out with a spoon and eating it like ice cream. I like adding avocados to everything I can eat, too. I've never made guacamole but it seemed pretty simple. Making things like guacamole can be simple when you know what you'd like in your mix. I hate ordering pre-made guacamole because it gets way too watery and runny, and I like making fresh guacamole so much better. It tastes a lot better, for one. What I used was:
- 4 ripe avocados
- 1 lemon
- 1 serving of cilantro, chopped
- 1 small tomato
- 1/2 cup of chopped red onions
- 2 teaspoons of salt
Mash avocados in a bowl after pitting them. Chop lemon in half, squeeze one of them into the mix. Add cilantro and onions. Dice tomato into small cubes and add as well. Mix vigorously. Squeeze the other half of the lemon over the mix. Add the two tsp of salt and keep mixing until the guacamole mix becomes soft. Serve with tortilla chips (or put them on a sandwich!) and enjoy. I invited Mission House seniors over (or more like, they walked through the back door of our house) and invited them to try some. They all loved it.
